Grandma Lillian’s Cookies
- Ingredients
1– 8 ounce package cream cheese
1/2 Cup of butter
1 Egg
1/4 teaspoon Vanilla Extract
1 (18.25 ounces) package of Yellow cake Mix (NOT the butter recipe kind)
1/4 Cup of Confectioners’ sugar
Directions
1. Preheat Oven to 350 degrees F
2. In a medium Bowl, cream together the cream cheese and butter. Stir in the egg
and vanilla. Add cake mix and stir until well blended.
3. Roll into 1 inch balls and roll balls in the confectioners’ sugar.
4. Place 1 inch apart onto an ungreased cookie sheet.
5. Bake for 10-13 minutes in the pre-heated oven. Remove from baking sheets to
cool on wire racks.

One of my favorite memories of making these cookies would be the first time we made them to take to an event. That was a day of firsts: the very first time John and Katrina tried these cookies and it was Grandma Lillian’s very first event, such a special day! Grandma was very particular about the way the cookies were made. We had to get all the ingredients out first, then separate them based on wet or dry ingredients. We had to rotate the pans in the oven half way through and make sure they were perfect in every way! Every time after we made them she would ask with a giggle”are we making these for home or are we making them to send to John and Katrina?” We valued our time baking together, for whatever reason or season! Now every time I make these cookies–especially for events, I whisper “We are making these for John and Katrina Grandma,” because I know my baking partner is right there reminding me to get out all of the ingredients, separate the wet and dry ones and rotate the pans! 🙂
